This is probably one of the most unheard of recipes. Bengalis are known for being ‘maach-bhaat’ lovers by birth but trying out fish cooked in alcohol batter rather than as an accompaniment to drinks is definitely exotic! All the essential ingredients you need to prepare this out of the box recipe are as follows:
‘Bhetki’ fillet – 1 kg
Black pepper (freshly ground) – heaped tablespoon;
Salt (according to taste);
White rice flour (which would be used for dusting) – 1 and 1/4th cups;
Oil (for deep frying, as much as needed);
Normal flour – 1 and 1/4th cups;
Baking powder: 1 teaspoon;
Vodka – 1 1/4th cups;
Beer – 11 1/4th large cups;
Procedure: - Wash the fish fillets and dry them using paper tissues.
- Put salt and pepper on the fish fillets and then dust the fillets with flour.
- Mix the normal flour, white rice flour and baking soda in a different bowl while slowly stirring it with beer and vodka to make the batter.
- Put the oven on medium heat, and heat the oil in a frying pan.
- Dip a single fillet at a time and fry it in the hot oil.
- Fry till the fillets turn a nice golden brown texture on the outside and then repeat the same for the other side as well.
- When it’s done, lift it from the oil and drain the excess oil.
